Super tasty Omelette that my Toddler loves as much as I do! This is a great Omelette to make and share with another person...

 4 Slices of Salmon Lox
 3 Eggs
 2 tbsp Milk or coconut Milk
 10 Capers
 ½ Avocado
 ½ tsp Butter
 3 tbsp Marbled Cheddar Cheese shredded

Beat in a bowl the milk and eggs. Pour egg mixture into frying pan that has been greased with butter. Turn element on 3, not quite medium... Cover with your frying pan lid.

Once almost fully cooked, add avocado slices, lox, shredded marbled cheddar cheese, and capers. Fold egg over and place on plate. Enjoy!
