This very simple Gluten Free Banana Bread Recipe is sure to be a family favourite. I make it for my children and I about once a month. It doesn't even taste like a gluten free bread... My best tip, use up your ripe bananas, as they'll make the best bread!
1. Mash up bananas
2. Then using a handheld blender, mix until Bananas are smooth...
3. Add 2 eggs, blend
4. Add vanilla extract, mix.
5. Add Flour, Baking powder, and butter, plus coconut sugar. MIx in and blend for 3-4 minutes until mixture is whipped.
6. Grease loaf pan with butter.
7. Pour Banana mixture into greased pan, and bake!
Preset oven to 375, and bake for 42-45 minutes. When you think it is done, insert your toothpick into the top of the bread and if it comes out clean, it's done!
Let cool fully before taking it out.
