One of my all time favourites to make my Toddler and I for lunch. My kid loves eating this lunch, and it is healthy for him. Feel free to cut the veggies how you like. I keep them small so my child can eat them without feeling they are to hard to chew. The veggies just blend in!

Ingredients:
 1 cup Japanese Rice
 1 cup Water for the rice
 1 tbsp Rice vinegar "Optional"
 1 large carrot Shredded
  Cucumber diced into small pieces
 1 cup Imitation Crab
 3 tbsp Real Mayonaise
 1 Sheet of Seaweed cut into small squares
 1 tbsp Japanese Seaweed and Sesame Rice Sprinkes
Rice Directions:

Bring water and rice vinegar to boil, reduce to medium low on your burner and add the 1 cup of Japanese Rice. Cover and let simmer for 10-15 minutes until rice is soft.

Imitation Crab preparation

Dice imitation crab into small pieces and add mayonnaise; mix well.

Vegetable preparation

Chop vegetables to desired thickness, and cut up the sheet of seaweed. Once Rice is done and you've placed it in a bowl, add the vegetables, imitation crab, and seaweed on top of the rice.

Sprinkle with Japanese Seaweed mix and sesame seeds, and drizzle with Soy Sauce. Enjoy!
