These low sugar cookies are loaded with goodness! You'll be getting energy from the oats, and fine unsweetened Shredded Coconut. There is only 1/2 a cup of sugar in these cookies and I used Semi Sweet Chocolate Chips. You can substitute the sugar for Coconut Sugar or Cane sugar to make these even a healthier treat! I love the chocolate and roasted coconut taste of these... Yum! My toddler had a lot of fun making them with me and & eating them too.

 1 ½ cups Gluten-Free Flour
 ¾ cup Melted Salted Butter
 1 pinch Himalayan Salt
 1 tbsp Baking Powder
 1 tsp Vanilla Extract
 ½ cup Gluten-Free Oats
 ½ cup Shredded Fine Unsweetened Coconut
 1 Egg
 ½ cup Golden Sugar, Cane Sugar, or Coconut Sugar

Preheat oven to 350 degrees.

Prepare Cookie Batter:

Place Butter, Vanilla Extract, & Sugar in a bowl, mix on low for a minute. Add your Egg. Mix on medium for 2 minutes. Add you baking powder, salt, flour, coconut shreds & Gluten-free Oats. Mix on medium for about 3 minutes.

Line Cookie sheet with Parchment paper if you have some. Make dough into balls about a half to 3/4's of an inch in diameter. My son and I then squashed the balls with a fork, and our hands until they are about 1/4 inch thick.

Bake for 8 minutes. Let stand for 10 minutes and Enjoy!
