Healthy Maple Mango Ice Cream

Notably, unlike Claire's Original Strawberry Ice Cream Recipe: I used different fruit, and added Pure Maple Syrup. So tasty!

 ½ cup Whole Fat Coconut Milk from Can
 2.50 cups Mango
 4 tbsp Maple Syrup
 1 tsp Vanilla Extract

In a blender ( I used my Blendtec), pulse until all ingredients are smooth. Depending how chunky your frozen mango is, you may need to add a little more coconut milk, but do this in the end only if needed. Enjoy!

Serve immediately or place in ice cube trays for later. if you leave it in a big tray and freeze it, it'll be hard to get out, or place into bowls...
