Smoked Salmon Salad with an Asian Dressing

This is an amazing salad! It is fresh, and even my toddler loves it. He often picks through it to find blueberries and salmon lox. Notably, this salad dressing recipe is not my own creation; it came from a small Tapas Bar in Kitsilano, Vancouver, B.C. This Tapas Bar isn't open anymore or I'd give credit with a link to their Restaurant. That being said, I've tinkered with it and like how it is. Once you make this salad once, it'll be a go to... Feel free to substitute the salmon lox for shrimp or prawns too. Enjoy!

Salad Ingredients:
 ½ Diced Carrot
 ¼ Diced Red Pepper
 1 Handful Fresh Blueberries
 2 cups Mixed Greens
 3 Slices Salmon Lox cut into small pieces
 ½ Avocado cut into big chunks
Asian Salad Dressing:
 1 tbsp Soy Sauce
 1.50 tsp Lemon Juice
 ¼ tsp Minced Ginger
 1 tsp Fish Sauce
 1 tsp Sesame Oil

After you've prepped your salad ingredients by cutting them up,
mix your greens and other veggies together. Drizzle Salad dressing sauce over the greens and veggies. Place on top of the salad your avocado, blueberries and Lox.

Use your fine cheese grater and prep your ginger. The finer the better for your ginger. In a bowl, add all of the ingredients together. Mix.

Notably, this is a bit of a saltier salad dressing, so you can if you choose, start with 1/2 a teaspoon of fish sauce and 1 teaspoon of soy sauce to see if that is enough for you.

I'm okay with this having a bit of salt with the salmon lox and dressing, but some people may find it a little on the salty side. Don't get me wrong though, this is a very flavourful and tasty salad dressing and salad! Enjoy!
