This is a very simple Omelette recipe that offers a lot of nutritional value and gets you ready to take on your day!

 2 Eggs
 1 tbsp milk(dairy or coconut milk)
 ½ TomatoDiced
 ½ tbsp Feta cheeseCrumbled
  cup Baby spinach leaves
 1 tsp Butteror, Olive Oil for your frying pan
 3 tbsp Salsa "optional"Have the salsa on the side to dip your omelette in after you've made it if you like?!
Making the best omelette

Step 1: Crack your 2 eggs in a bowl and add your milk. Mix well. Heat should be just below medium, but not on low. Add your butter or oil to the frying pan. Poor in your eggs mixture. A small frying pan is the best to use by the way...

Step 2: On a cutting board dice up your half of a tomato, also prep your baby spinach by washing and drying it. Crumble your Feta Cheese if you don't have store bough crumbled feta.

Step 3: Go back to your eggs, and lift with a spatula the corner of your omelette, then tilt your frying pan towards the lifted corner, and let the liquid eggs run under the already cooked part. Do this all around your omelette until most of the wet egg mixture has gone under the already cooked omelette. Wait half a minute and then flip your omelette as it will be thick enough now to flip easily.

Step 4: Once you have flipped your omelette, take all of your prepped ingredients (Spinach, Tomatoes and Feta) and place them all on one half of the round circle. Fold over the other half of the omelette and let cook for 2 more minutes. Then, once done, take the omelette off and place it on your breakfast plate.

Tip: This omelette goes really well with some mild to medium salsa, so if you have some salsa kicking around in your fridge, place a dabble of it on your plate with your omelette. Enjoy!
